Sydney’s “Temple of Cheese,” the GPO Cheese & Wine Room, has collaborated with Prime Steak Restaurant to create Sydney’s best artisan farmhouse cheeseburger collection focused on speciality artisan cheeses
The new gourmet cheeseburger range now available at Crystal Bar in the GPO building showcases premium cheeses including Truffle Brie from Coulommiers in north-central France, Blue Gorgonzola from Piedmont, Italy and Gruyere Cheese from Gruyeres in Switzerland.
Fromagier at GPO Cheese & Wine Room, Carlo Colucci said: “I have personally hand-picked creamy cheeses with sharp, bold flavours to complement the fresh ingredients on the burgers. I will also be changing the cheeses with the seasons to offer diversity and variety, and to ensure we’re using cheeses which are at their peak.”
“The burgers are all about the cheese; but then to me, everything in life is about cheese. It’s not by coincidence that when we take a photograph, and it doesn’t matter whether we’re in England, France, Italy or America, everyone says “say cheese!” before taking a photo. In fact, every time I see someone smiling, I know deep down they are thinking of cheese.”
Head Chef at Crystal Bar, Natalia Sukhodoeva said: “The grilled-to-order Black Angus beef patty for the new burger range was inspired by Prime Restaurant’s signature tartare, which we make fresh daily with 100% grain-fed Black Angus shoulder with the ideal 80% beef, 20% fat ratio and imported spices from France for a distinctive flavour.”
For a non-beef alternative, there is a Chargrilled Chicken Fillet Burger with housemade chilli sauce, creamy mayonnaise and fresh lettuce, or a Chickpea, Sweet Potato, Sweet Corn and Quinoa Burger with halloumi and gruyere cheese, roasted tomato chilli jam and tahini cream.

The new gourmet burger range is priced from $10.50 to $16.50. Available at Crystal Bar for lunch from Monday to Friday, 12:00-3:00pm and dinner on Monday and Tuesday, 6:00pm-late and Wednesday to Friday, 5:30pm-late.
