ATAVI, the exclusive food brand created in partnership with legendary Catalan chef Albert Adrià and launched in the UK last year, will release its new Vortici pasta shape this September.
The team has created the Vortici, a short pasta that will sit alongside their renowned quality Tagliatelles. Designed to expand the ATAVI portfolio and provide customers with the tools to experiment with more pasta pairings at home, the two new Vortici unlock astonishing flavours without adding unnecessary extras to pasta’s two gloriously simple ingredients: wheat and water.
The new short pasta is made in small batches and has a unique spiral shape and rough texture designed to hold a sauce and provide a full sensory experience. The new shape will come in two taste profiles: ATAVI’s signature Sourdough and Smoked flavours.
The Sourdough Vortici will carry the taste and aroma of freshly baked bread with a hint of sourness. Crafted from 100% Italian durum wheat, this creation is enhanced by natural leavening and pairs perfectly with a combination of sweet pears, rich Gorgonzola cheese, and crunchy walnuts for a classic taste sensation.
The Smoked Vortici provides a toasted, rich, and smokey taste, created by 100% durum wheat nixtamalised and smoked with vine canes. Smoked Vortici is best enjoyed with a glass of rosé and pairs well with seasonal vegetables, such as courgettes, spring onions, and rocket, with creamy burrata.
Each of the ancient techniques used to create ATAVI Vortici needs… time. Each natural process carried out in Italy requires a substantial amount of time and patience to complete. The result is small batches of exquisite produce, each packed by hand in beautiful, triangular packs.
To create something so intricate and retain its delicacy requires a mixed team of experts and creative genius like Albert Adrià, the spirit behind acclaimed restaurants El Bulli and Enigma. His partnership with ATAVI has seen him work collaboratively to develop the three tagliatelle flavours last year, a process that took over two years of experimentation to refine, and now, the new Vortici shape.

The Vortici pasta by ATAVI will be priced at £16 per 280g pack [four servings]. The new range will be available from September to purchase online at Atavi.uk, at luxury retailers, Harrods, in-store, and online.
