In a year marked by the reopening of legendary places such as Laurent, Maxim’s, and L’Abbaye des Vaux-de-Cernay, under the impetus of the Paris Society, Laurent de Gourcuff has added to the excitement with the newly opened Baronne, which is located in the Hôtel Salomon de Rothschild. Laurent, in association with Viparis, has breathed new life into one of Paris’ most beautiful properties, and in this feature, we look at its story.

This autumn, expect a rush of excitement, a delightful escape, and a grand new address of style, adventure, love, and indulgence. It is an address that makes Paris even more thrilling as the city’s celebrations lift their elegant heads high and hearts beat faster and stronger. Where the excitement lives, Paris Society is never far behind.

Known for curating some of the most magical venues, the group is now opening the grand doors of 11 rue Berryer. In the Étoile district, this historic location is poised to welcome a fresh audience. But this isn’t just another venue—it’s something much more. It’s a place where the story of Paris continues to unfold, blending history, design, dining, and festivity. This time, it’s Baronne.

The Hôtel Salomon de Rothschild is more than just a building—it’s a story, a saga of a powerful woman ahead of her time. Baroness Adelheid von Rothschild, known as Baroness Adèle, was widowed at a young age. At the end of the 19th century, she transformed several hectares of Parisian land into a masterpiece of architecture and gardens.

Adèle created a magical sanctuary where the elegance and spirit of her era flourished.

After her time, the arts continued to thrive within its walls, and the hotel was eventually designated a historical monument. For years, it maintained its quiet charm, guarding its secrets, and for decades, it stood as a sleeping beauty of sorts. But this autumn, in a fairytale-like turn of events, the Baronne reclaims her place in the modern world, back with the energy of a new century.

A Dazzling Interior
After crossing the courtyard and climbing a few quick steps, you’ll find yourself in a space that feels like a dream where Paris seems to step through a mirror. Baronne reveals some of the most stunning interiors in the capital, with soaring ceilings designed to stir emotions.

Follow its twists and turns, starting with the grand staircase, which leads to a series of magnificent rooms.

First, the Atrium, then the Petit Salon, and finally the Salon d’Honneur, each space flowing seamlessly into the next, like scenes from a waking dream. The ceilings are adorned with lush, botanical motifs, the marble fireplaces stand proudly, and grand carpets stretch across polished parquet floors. Chandeliers glitter like jewels, while the drapes hang like evening gowns, and the embossed fabrics and ornate woodwork reflect their beauty back from mirrored walls.

Secret Gardens and Open-air Terraces
Behind every French window, Baronne reveals enchanting garden secrets and dedicated terraces. Here, guests can enjoy lunch under the open sky, dine surrounded by greenery, or sip drinks beneath the stars. This verdant setting blends the charm of a Parisian park with the sophistication of a chic bar-restaurant, a true meeting point between city life and nature. It’s a privileged atmosphere, with lush foliage, blooming flowers, trees, and elegant colonnades casting shadows over the grand building.

To the left of the grand staircase, down a corridor where the banquettes blush with pleasure, you’ll find a true gem of a bar.

Luxury, marble, wood panelling, and rich indulgence converge here like a magnet. With elegant horseshoe-shaped curves, cool marble at your elbows, and Cordovan leather tempting your feet, it’s a space designed for pure delight. Classic and signature cocktails are served with finesse, making this one of the most irresistible bars in Paris. Glasses clink, silverware meets plates, and further on, the space extends into a winter garden alcove.

As night falls, life and glamour take centre stage.

The Interior Design
Meet Corine Sachot, a new star in the world of interior design. Discovered at the CoCo restaurant in the Opéra Garnier, she has crafted a masterful setting at Baronne that blends memory with modernity, fusing fin-desiècle style with contemporary finesse and marrying aristocratic charm with high-tech elements.

The furniture, fabrics, prints, and lighting she has conceived, designed, and orchestrated showcase the best in artisanal craftsmanship. They echo the elegance of the new Roaring Twenties while honouring the timeless sophistication of the Hôtel Salomon de Rothschild.

The Dining Experience
Baronne offers both a dining table and a bar, each meant to be enjoyed together or separately, from noon until well past midnight. During lunch, Baronne shines brightly, perfect for whetting appetites, fostering conversations, and easing business discussions as the upscale neighbourhood buzzes with activity. By dinner and into the late evening, Baronne transforms into a seductive venue as Paris embraces the night.

It’s a place where guests can fully embrace their allure, step into the spotlight, and enjoy chic table settings without the constraints of silverware.

The atmosphere is heightened by a curated soundtrack of soul, funk, and easy listening that complements the room’s vibe. It’s a return to the carefree spirit of nightlife, a theatrical setting where the audience becomes the star, and the celebration bubbles over like the champagne that flows freely.

The Return of the Luxury Grill
The luxurious grill is making a grand comeback, and just saying the word evokes joy and stirs the appetite. Grill! This is chic city cuisine featuring accessible recipes that celebrate gastronomy. Here, the extraordinary meets the everyday as casual fare mingles with sophistication, retro flavours connect with contemporary tastes, and classic dishes take centre stage, all while trendsetting delights reign. The grill area rekindles the joy of table-side service, with skilled staff performing impressive carving and wheeling in carts laden with delights.

The service anticipates your needs and responds promptly. At the grill, guests enjoy the luxury of a wide selection, striking a balance between fair pricing and delightful indulgences. It’s a dining experience designed to please, where customers are once again treated like royalty.

Irresistible Culinary Delights
Indulge in irresistible treats such as spicy mayonnaise popcorn perfect for sharing, six generous Burgundy snails ready to delight, and a twist on yellowtail carpaccio drizzled with smoked vinaigrette.

Enjoy the garden-inspired dish featuring lobster, crisp salad, lamb’s lettuce, black truffle, and succulent lamb chops served with rich jus and new carrots. Experience the coastal flair of small langoustines enhanced with parsley butter, spinach sprouts, and fennel. For a show-stopping main, savour a whole turbot or a wagyu flank steak, complemented by roasted butternut squash with parmesan cream, and end on a sweet note with a truly decadent chocolate soufflé.
