Available for guests to savour during their stay, the resort has introduced a new menu and elevated culinary experiences across its dining venues from breakfast to dinner. Highlights include a traditional steamboat recipe with a twist and a new pescatarian menu in the serene ambience of the Emerald Room.
Guests can also enjoy a refreshed selection of breakfast, lunch and dinner options as well as a menu inspired by Traditional Arabic and Islamic Medicine (TAIM) from its sister-property Zulal Wellness Resort by Chiva-Som in Qatar, available in Taste of Siam, the resort’s signature beachfront restaurant.

Siam Steamboat
The Chiva-Som Siam Steamboat at The Emerald Room is a unique culinary experience that re-envisions a traditional dish with a healthy twist. Traditionally a hearty, steaming pot of fresh ingredients shared among friends and family, its wellness-inspired version, the Chiva-Som Siam Steamboat, offers smaller, nutrient-dense portions for individuals or intimate two-person settings.
This highly nutritious dish features a fragrant soup made from Hua Hin’s pure coconut water, known for its natural sweetness and refreshing qualities. Fresh vegetables, premium lean proteins, and fragrant herbs simmer over an open flame, releasing their natural flavours while preserving their nutritional value.
The Siam Steamboat offers a nourishing twist on a classic favourite, accompanied by signature dipping sauces that creatively blend traditional flavours with local ingredients.
Expertly curated by Chiva-Som’s renowned chefs, the menu features ingredients that are not only fresh and fragrant but also carefully selected for their health benefits. Together, they create a symphony of vibrant colours, earthy aromas, and balanced flavours for a nourishing yet tantalising experience.

Pescatarian Menu
The resort’s new pescatarian menu at the Emerald Room restaurant is an exciting and vibrant addition to its wellness fine-dining experience. Combining taste, nutrition, and sustainability, this menu highlights seasonal, ethically sourced fish and seafood alongside fresh, plant-based ingredients from Chiva-Som’s organic garden.
Chiva-Som Hua Hin’s pescatarian menu features hot soups such as lobster bisque and crab miso and lean protein starters including tuna ceviche and Cajun-spiced prawn with pomelo salad. Mains feature freshly cooked delicacies like oven-baked snowfish, roasted kingfish in a citrus sauce and grilled lobster tails, a celebration of seafood-rich benefits combined with nutrient-dense vegetables in a medley of flavour and vitality.
Each dish balances lean proteins, heart-healthy omega-3s, and essential vitamins, leaving guests feeling lighter and more balanced.
TAIM-inspired Menu from Zulal Wellness Resort by Chiva-Som
The new dinner menu at Taste of Siam, the much-loved beachfront restaurant, offers a blend of timeless classics, East Asian specialities, and seasonal delights. To cater to diverse tastes, the new menu includes signature dishes inspired by the Traditional Islamic and Arabic Medicine (TAIM) traditions of Chiva-Som Hua Hin’s sister property, Zulal Wellness Resort, in Qatar.
TAIM draws on the rich heritage of ancient holistic health practices rooted in Arabic and Islamic traditions, where food is a key element in supporting overall well-being. At Zulal Wellness Resort, these practices have been modernised and integrated into the cuisine.
Commitment to nurturing mind, body and spirit, the dishes feature nutritious ingredients that promote balance and vitality, reflecting the deep connection between food and wellness.
TAIM-inspired dishes include roasted lamb rack served with herbal tahini and spiced baked cauliflower; Middle Eastern dips, chickpea, tahini turmeric with cruciferous vegetables and pomegranate; turmeric and ginger soup; date and honey saffron cake and mujaddara, a signature dish of lentils and rice topped with crispy onions; and a Fattoush salad, spicy herb sauce and coconut yoghurt.
The TAIM-inspired menu will be available at Chiva-Som Hua Hin until 31st December 2024.
Refreshed ‘Taste of Siam’ Menu
Chiva-Som Hua Hin has also refreshed its breakfast, lunch and dinner menus, enhancing variety for guests. The new ‘chef’s selection’ features beloved favourites alongside new creations, all crafted with nourishing, wholesome ingredients.
The menu highlights vibrant dishes celebrating local flavours and seasonal produce, such as poached egg on avocado and cauliflower hash browns, topped with Ayurvedic powder in the morning.
In the evening, guests can enjoy a variety of culinary delights, including both existing favourites and new additions to the menu. Some of the exciting new options include baked salmon fillet with ivy gourd, glazed onion, and a tangy gravy; herb-crusted lamb served with mashed cruciferous vegetables, a balsamic reduction gravy, and glazed carrots; and East-Asian delights such as gỏi cuốn (fresh spring rolls) with prawn or tofu.
For a truly unique experience, the crab miso, a kombu seaweed broth infused with organic miso paste and served with crab meat, is a must-try.
