‘Gate No. 1’ is Perrone’s personal favourite of the Verve chapter. On either side of the bar is a hand-hammered iron gate – the one on the left reveals bottles behind it including gin, Genever, red wine, vermouth and port. All of these combine to make this exceptional drink with the notes and body of the wines, the maltiness of the Geniver and freshness from strawberry Kombucha. It is served long to reflect the height of the gates, in a Kyoto glass with an ice sphere and topped with a chocolate depiction of the gate’s unique pattern.
‘Flora’ is one of the three mocktails that span the menu. Aecorn Dry, the non-alcoholic aperitif, is mixed with a purple cordial of blueberries and fennel, and topped with peach and jasmine soda. Blackcurrant powder embellished the outside of the glass. The Connaught Bar was ahead of the curve with their offering of innovative non-alcoholic drinks. Since the bar opened, over a decade ago, Perrone and team created mocktails to pack the same punch as their boozy companions.
Of the new menu, Perrone says, “It has been a labour of love of the entire bar team for the past nine months, and whilst we’re all constantly inspired by our travels and backgrounds, we have the luxury of being so constantly motivated by our immediate surroundings of the bar. All of the drinks are representations of deep research into each and every ingredient and how we transform them to create the very best taste and experience. We want to create flavours that are persistent on the palate, therefore leaving our guests always wanting more!”
