January 22nd and 23rd, 2025, will witness a collaboration between ESTRO and Bangkok’s Baan Tepa, two Michelin-starred powerhouses. Italian Chef Antimo Maria Merone of Estro and Baan Tepa’s Chef Chudaree’ Tam’ Debhakam will front this unique culinary event, where they will be offering a special menu that brings together the best of Italy and Thailand under one roof.
For this collaboration, the two chefs will impart their considerable culinary prowess into an exclusive menu that blends Italian and Thai influences. Each dish has been thoughtfully crafted exclusively for this event and offers exciting flavour combinations and unexpected twists on beloved favourites from both restaurants. The full menu will be revealed to guests on the night of the event to ensure a delightful surprise.
Chef Tam is the visionary behind Baan Tepa and the world’s first Thai female chef to hold two Michelin stars. She is committed to sustainability and deeply passionate about authentic Thai flavours. Her inventive approach to farm-to-table dining has garnered international acclaim.
At Baan Tepa, guests get to enjoy a contemporary Thai menu using seasonal and sustainable ingredients, some of which are grown in the restaurant’s backyard. The historic house, built in the 1980s and owned by Chef Tam’s grandmother, Lady Suwaree, is part of the Baan Tepa experience.
Debhakam is a home that has been in the family for three generations. The compound has now been converted into an urban food space with three key sections: Tepa Kitchen, Tepa Garden and the house itself.
On the other hand, Estro, the brainchild of Naples native Chef Antimo Maria Merone together with new General Manager Graziano De Gregorio, offers refined tasting menus and a dinner and a la carte menu that pays homage to Antimo’s heritage while showcasing his innovative culinary techniques, which is celebrated for its modern take on Italian cuisine.

About Chef Tam Chudaree Debhakam of Baan Tepa
Tam Chudaree Debhakam owns and is the Head Chef at Baan Tepa Culinary Space, a fine-dining restaurant boasting local ingredients, sustainability, and culinary creativity. She is also an advocate of food waste reduction and was the Chef Ambassador for Thai Harvest/ SOS and UNEP campaigns from 2015 to 2017.
Tam Chudaree graduated from the International Culinary Center in New York City. From 2015 to 2017, she worked at Blue Hill at Stone Barns, New York, for Chef Dan Barber. The restaurant is located on farmland and is known for its sustainable food concept and menu that showcases organic fresh produce.
Chef Tam is passionate about farm-driven cuisine and her knowledge of nutrition. Thus, her cooking focuses on responsibly grown and sourced local produce, with a liberal addition of traditional Thai flavours and a modern flare.
Baan Tepa was awarded Two Michelin Stars in 2024, a Michelin Green Star (Becoming the first Thai female with two Michelin Stars in the world), the Michelin Young Chef Award 2024, and it was featured on Asia’s 50 Best Restaurants 2024 list.
The two-night collaboration at Estro promises diners an exclusive 8-course collaboration menu priced at HK$2,680+10% per guest.
