The hotel bears the name of a Scandinavian king, a reminder that this island was once a Swedish colony, but make no mistake – the Carl Gustaf couldn’t be more French! While offering its guests a soothing Caribbean ambience and the perfect setting to relax and unwind, the hotel also boasts elegance and typically French savoir-faire, as demonstrated by its 21 luxury guestrooms and suites.
Designed by Gilles & Boissier, one of France’s leading interior design agencies, these luxurious cocoons are adorned with wood and embellished with fresh, light textiles. In addition, their skilful design allows just enough natural light to flatter without overwhelming. At the same time, the elegant decor harmoniously combines the French Riviera style with a feel of the Tropics.
Of course, guests don’t come to “Le Carl” simply for its comfortable accommodation, as the hotel has myriad other attractions.
One of the most obvious reasons is its location. Situated above Gustavia, the capital of St Barth, this 5-star hotel treats its guests to the best view of the island, and then there’s the Diane Barrière Spa and its Biologique Recherche treatments – another French company and quite simply the best!

Since reopening, the Barriere group’s Caribbean gem now benefits from a second restaurant, the Beefbar St Barth. It is the latest addition to an already extensive family of restaurants dotted around the globe, from Hong Kong to Sao Paulo, via Milan, Paris and Dubai.
Founded in Monaco, Beefbar came top in the “World’s 101 best steak restaurant” awards, a title contested by around 800 different restaurants. For many years, it has been a favourite with the Principality’s jet-set, so you can expect the highest quality cuisine.
Nestled in one of the hotel’s peaceful tropical gardens, the Beefbar St Barth will delight guests courtesy of the brand’s famous iconic dishes to a backdrop of stunning views. Enjoy fillets and steaks sourced from the finest Black Angus and Wagyu, and savour what is considered the world’s very best meat, namely the famous Japanese lobe, produced – as it should be – in Japan.
Discover “signature” dishes created by Thierry Paludetto, executive chef at the Giraudi group (the brand’s parent company), such as the Bao bun (Korean bun, smoked lobe beef and Jasmine tea), Gyozas (lobe beef and chorizo dumplings served with a jalapeño vinegar sauce), Croque Sando (a combination of dry-aged beef rib-eye prosciutto, mozzarella and Beefbar sauce) and Wagyu Bolognese (pappardelle pasta with a home-made Wagyu beef ragu and 101-month-matured parmesan cheese).
