About Chef Franckelie Laloum – Louise (1*)
Provence-born Franckelie Laloum kicked off his career working under renowned French chef Le Squer, who was then leading the Parisian dining institution Pavilion Ledoyen. After this, he joined the kitchens of other well-respected Michelin-starred kitchens such as Troisgros, La Palme d’Or and Villa Archange. At Maison Pic, he helped the restaurant to take home three Michelin stars as its chef de cuisine.
Franckelie then took off eastwards to further develop his career, first landing in Shanghai to manage modern European restaurant Jade on 36 at Pudong Shangri-La East Shanghai, and later joining The Ritz-Carlton, Tokyo as executive sous chef.
When his friend Julien Royer, chef and owner of three Michelin-starred Odette, offered him to lead Louise as executive chef, he jumped at the opportunity. Set in a two-story heritage building, Louise serves heart-warming, reimagined French cuisine paired with genuine hospitality.
