Rhiannon Lambert’s recipe for Picota Cherry Chocolate Cookies should go down as an absolute treat as the natural sweetness and high nutritious value of Picota cherries, when paired with Rhitrition’s use of dark chocolate chips, means that you will be doing everyone eating one, a delicious favour.
Picota cherries are unique to the Spanish Jerte Valley and protected by a denomination of origin (DO) certificate. This verifies that the fruit has been grown, harvested, and packed under rigorous quality control procedures. Dark red in colour and crunchier in texture than other cherries, the Picota variety is distinguished as the only European cherry to be sold naturally stalkless.
Following a century-long tradition, the stalk is left on the tree when harvested by hand, ensuring the fruit is only picked once it reaches optimum ripeness. The result is that the Picota cherries, which reach UK stores from mid-June to early August, are of the highest quality.

How to make Picota Cherry Chocolate Cookies
Time: Less than 30 minutes plus cooling
Ingredients
- 250g of European Picota Cherries (pitted)
- 150g of Flour
- 50g of Oats
- 60g of sugar
- 2 tbsp of mixed seeds (flax, pumpkin, and sunflower)
- 50g of 70% dark chocolate chips
- 1 tsp of baking powder
- 70ml of walnut oil
- 50ml of Almond milk
Method
- Mix oats, flour, seeds, sugar, and baking powder.
- Add oil and almond milk and mix until well combined. Add chocolate chips and cherries.
- Spoon over a lined baking tray, and press with your hands into a cookie shape. Bake for 15-20 min at 180C.
