This year, the Red Carnation Hotel Collection will be celebrating ‘A Year in Food’ to highlight the wonderful food offering across their prestigious group of hotels, their incredible award winning chefs and the recipes of President and Founder, Mrs Beatrice Tollman.
From the foothills of the Cederberg Mountains in South Africa to the shores of Lake Geneva, Red Carnation Hotels is a collection of 17 highly-acclaimed family-run luxury boutique properties in London, Dorset, Guernsey, Geneva, South Africa, Florida and Ireland.
Mrs Beatrice Tollman purchased the first Red Carnation property, The Chesterfield, Mayfair in 1984 having begun her hotel experience in her native South Africa. She has a driving passion for genuine hospitality and service and her ongoing involvement on the front line of her hotels is an inspiration to each member of staff.
In her early career, Mrs Tollman took charge of the kitchen, and ever since then, food has been a real passion of hers and remains at the heart of Red Carnation Hotels. Her culinary expertise and recipes built over the years, and which are on the menus at each of the hotels, have been amalgamated into her cookbook named ‘A Life in Food’. These comforting dishes, using only the freshest ingredients, are amongst the most popular choices on the hotels’ menus to ensure her guests enjoy a ‘home from home’ experience in every sense.
