Mark has been instrumental in transforming La V into its new improved incarnation. He also oversaw transformations at the U.S. Grant so he knows what makes an iconic hotel work: incorporating new features without losing the magnetism and charm of the old. What does he most enjoy about working at La Valencia?
“People do say that if La Jolla is the Monte Carlo of Southern California, then La V is its palace,” he explains over cocktails. “But beyond even the beauty of the setting, my favourite part of this job is finding out that most guests have a story about a role La V and her staff have played in their lives.
“Many of our guests were married here or met their significant others at La V; others return year after year for family celebrations or quick escapes. Some have a relative or friend who used to work here and still others tell me they just wouldn’t stay anywhere else when they come to San Diego. We welcome everyone to create memories at the new La V.”

I loved the hotel’s restaurant offerings, but don’t miss out on the eateries in the village. George’s at the Cove has unbeatable ocean views and an award-winning menu of regional cuisine. My friend and I dined at California Modern situated on the restaurant’s lower level. Executive Chef Trey Foshee was born in Hawaii and raised in Ojai, and clearly, draws much of his inspiration from the ocean. The four-course tasting menu was superb. Our starters – we shared plates – comprised fabulous cauliflower rigatoni with white cheddar gremolata and nut chutney, and a mouthwatering beef tartare. For mains, we plumped for a delicious smoked Jidori chicken and lobster which paired well with a fruity Paul Hobbs Pinot Noir from Napa’s Hyde Vineyard. Burnt honey Panna Cotta and Warm chocolate tart were our dessert choices – both excellent.
Located in the heart of the Village of La Jolla, La Valencia is seconds from a wide selection of upscale shops and restaurants. Luxury retailers include Ralph Lauren and Brooks Brothers, while the area has a thriving gallery scene. Visit Thumbprint for urban art, Scott White showcases the likes of Willem deKooning and Alexander Calder, while the intimate Quint Contemporary Art attracts stellars such as Ryan McGinnis and Manny Farber.
Renowned leisure destinations are minutes away too, including La Jolla Cove, Torrey Pines State Park, Scripps Ocean Institute and the Birch Aquarium as well as UCSD / La Jolla Playhouse and the La Jolla Museum of Contemporary Art.
