Two well-known Swedish manufacturers, Tormek and Morakniv, combined their expertise to create the Tormek T-1 Morakniv 1891 knife sharpener. In this feature, we look at how it can elevate your kitchen prowess.

Tormek has been manufacturing knife sharpeners for over half a century, which means it knows more than a thing or two about sharpening blades. For its latest launch, Tormak has collaborated with Morakniv, another well-known Swedish brand, to produce a special version of the much-lauded T-1 sharpener.

The Sharpener
The new Tormek T-1 Morakniv 1891 has a sleek industrial design. It comes fully assembled with a powder-coated zinc body stamped with the collaboration logo, diamond grinding wheel, composite honing wheel, and solid birch handle, which matches the famous Morakniv red.

The sharpener’s red handle is a nice addition to its subtle minimalist design, and this, coupled with its excellent capabilities, will undoubtedly ensure that it captures the attention of many culinary connoisseurs.

The Tormek T-1 Morakniv 1891 is quick, easy to use, and clean, and what makes it even more appealing is its quietness. It is also pretty much capable of sharpening blades of any length. It utilises the knife sharpening expert’s tried-and-tested sharpening system, developed for professional kitchens, which is designed to deliver a razor-sharp and durable cutting edge to ensure the blade stays sharper for longer.

Just three steps to sharp knives:

The option to set the preferred bevel angle
You can choose any angle between 8 and 22 degrees. However, 18 degrees (the 1891 Utility Knife is 18 degrees per side) is a good angle if you are unsure. A small angle will cut more easily, while a large angle will give a stronger edge.

Sharpen on both sides
The fine-grained diamond grinding wheel sharpens all types of steel, including ceramic knives, to professional sharpness. The low speed means that there’s minimal steel wear. Insert the clean, dry knife into the guide. A magnet in the patented guide collects the steel particles, keeping the grinding wheel clean. Follow the shape of the knife and apply only gentle pressure.

Honing to a razor-sharp finish
Simply remove the burr and polish both sides of the knife on the honing wheel. After sharpening, a ‘burr’ is created, which needs to be honed off to obtain a sharp and durable edge.

Unlike many other sharpeners, Tormek’s T-1 sharpens the entire bevel of the knife, not just the outer edge. Bevels can be sharpened separately, and there’s the option to set different edge angles on each side of the blade or sharpen just one side, which should prove useful for more advanced knives. Finally, as you would expect from a product made in Sweden, it has been built to last and comes with an 8-year warranty.
