The Legacy House, Rosewood Hong Kong’s Michelin-starred Cantonese restaurant, is celebrating the turn of the season by unveiling its annual hairy crab menu by Chinese Executive Chef Li Chi-Wai.

Chef Li will draw on age-old Cantonese cooking techniques for the hairy crab menus, adapting traditional recipes in new and innovative ways. The Legacy House’s seasonal hairy crab menus will be available from 16 October until mid-December 2024.

New Hairy Crab A la Carte Specials and Set Menu at The Legacy House
The autumn season marks the much-anticipated return of The Legacy House’s novel Hairy Crab menu. Chef Li presents a menu featuring premium hairy crabs sourced from Lake Tai (Taihu) in mainland China. Crowned the “King of Crabs,” the coveted hairy crab is celebrated for its gentle, sweet taste and succulent texture.

The crustacean will be present in eight premium Cantonese dishes, which range from the Steamed Hairy Crab (8 Tael, at market price) steamed in ginger and a delicate herb broth to gastronomic delights such as Steamed Shanghainese Pork Dumplings (HKD90 per piece) with hairy crab cream.

In addition, the menu will feature Braised Rice with Fish Maw and hairy crab cream in a clay pot (HKD380 per person), Braised Tofu with scallops and hairy crab cream (HKD420), Stewed Mantis Shrimp with egg white and hairy crab cream (HKD680 per piece), and Braised Fish Maw with hairy crab paste and Alba white truffle (HKD1,280 per person). The perfect balance of flavour and texture, Braised Green Bean Noodles with Hairy Crab Paste (HKD2,880), require a day advance order.

Chinese wine is available to pair with the meal, including Guyuelongshan, Long Wen 15-Year, for HKD880 per jug or HKD1,680 per bottle, or Guyuelongshan, Diao Yu Tai 20-Year, for HKD3,580 per bottle to share.
