In response to customer interest in reducing ultra-processed foods and harnessing the power of plants, Mindful Chef, the UK’s highest-rated recipe box, has announced it has partnered with ZOE, the science and nutrition company, on a range of recipes to feature on the Mindful Chef menu this November.
The six nourishing recipes, hand-picked by ZOE’s co-founder and #1 Sunday Times bestselling author Prof. Tim Spector, from his new book, The Food for Life Cookbook, will be featured on the Mindful Chef menu from November 3rd to 16th.
The dishes embody ZOE’s core nutritional principles, such as incorporating 30 different plants per week and minimising ultra-processed foods. This approach aligns with ZOE’s and Mindful Chef customers’ health motivations, encouraging them to transform their health, eating habits and overall well-being through food.
The recipes, packed with vibrant vegetables, nutrient-rich plants, and gut-friendly fermented ingredients, include:

- Aubergine Parmigiana
- Sweetcorn & Spinach Dhal with Curried Cashews
- Roasted Squash, Beetroot, and Kale with Toasted Grains
- Red Pepper Quinoa Salad with Kefir Dressing
- Gochujang Bean Bowl with Eggs & Kimchi
