Relais & Châteaux will be participating in Food on the Edge, an annual international two-day symposium in Galway that sees chefs and food enthusiasts come together to discuss the future of food.
Food on the Edge will see three of the Relais & Châteaux chefs come together to talk and debate about the future of food in a panel discussion focusing on marine resources and sustainable seafood solutions called ‘Fish Unknown: Diversifying Your Plate’.
The line-up includes Silvia Baracchi of Relais Il Falconiere, Guy Owen of Idle Rocks at St. Mawes and James Coffey, Park Hotel Kenmare.

With the largest collection of chefs in the world, Relais & Châteaux continues to its commitment to and promotion of sustainability in seafood. This year, Relais & Châteaux championed a campaign titled “Fish Unknown” – challenging chefs’ to create menus using seafood from sustainable sources.
Over 200 chefs participated worldwide in the initiative with the overall aim of contributing to the end of mass farming over-sourced seafood, ahead of World Ocean Day, which takes place every year on June 8.
