Rosewood Hong Kong has announced it will combine forces with The Academy by Simon Rogan this September. The two well-known names in the hospitality sector will help nurture culinary talent and advance the industry through a series of events, which will include a collaboration dinner, masterclass, fireside chat, and cultural tour.
Rosewood Hong Kong and Academy by Simon Rogan share the same commitment to inspiring, enriching, and positively impacting individuals and the environment. Circular hospitality is at the core of both operations. ‘Rosewood Empowers’ is the focus of this collaboration, with the hotel dedicated to developing and nurturing new talent through education and upskilling.
A significant component of the ‘Rosewood Empowers’ initiative is the global internship programme, developed in partnership with the International Culinary Institute (ICI), a member institution of the Vocational Training Council (VTC).
This initiative aims to expand perspectives, foster talent, and enhance standards within the hospitality and tourism sectors.
Simon Rogan is an internationally renowned British chef with eight Michelin Stars and two Michelin Green Stars to his name; he also stands at the forefront of the farm-to-table movement worldwide.
His restaurant empire today spans nine award-winning establishments across two continents and continues to be recognized by their respective communities for their efforts in sustainability.
The Academy by Simon Rogan was launched in July 2021 to provide culinary students with a unique hands-on learning experience and to develop the skills needed for a successful career in hospitality. It was created as a direct response to the ongoing staffing issues faced by the hospitality sector, and its goal is to reignite the passion for the industry and provide weight for those who choose to work within it.
Rosewood Hong Kong & The Academy by Simon Rogan Program Overview
With a total of 9 students visiting from the UK and 20 students from the International Culinary Institute of VTC participating in the program, the students will first join a masterclass led by Sam Ward, Simon Rogan’s worldwide Managing Director, will provide Rosewood’s culinary trainees with invaluable insights and practical knowledge on 28 August.
Following this will be a fireside chat with acclaimed chef Simon Rogan on 2 September. Rosewood trainees, Academy apprentices, and ICI students will have the opportunity to engage in an illuminating chat session to broaden their horizons, nurture their talent, and elevate standards within the hospitality and tourism sectors.
The partnership continues on 2 and 3 September, with a special collaboration dinner showcasing a six-course banquet-style feast prepared by the Academy by Simon Rogan apprentices and ICI students at Botanical Kitchen, Rosewood Hong Kong’s newest event space.
The six-course menu will feature dishes thoughtfully created and presented by Academy by Simon Rogan apprentices in partnership with ICI students and instructors. Optional beverage offers include a three-glass wine pairing option or a special “Sense of Flavours Drink Menu” presented by Rosewood Hong Kong’s XX bar.
The partnership will conclude with a cultural day excursion on 4 September, during which the Academy by Simon Rogan apprentices will visit local wet markets, the VTC Pokfulam Complex, and the ICI campus together with students and chefs from Rosewood Hong Kong.
About The Academy By Simon Rogan
Created in collaboration with Kendal College, one of the best hospitality schools in the UK, the Academy has been specifically designed to take students on an exciting journey into the world of hospitality through immersive, hands-on learning.
The course runs for 15 months, culminating in a fully expensed week-long trip to Hong Kong to work with the Head Chef in Roganic, Aulis and The Baker and The Bottleman – with all flights and hotel accommodation paid for. Throughout the programme, students work across the restaurant kitchens (L’Enclume, Rogan & Co and Henrock) in the Lake District for four days a week.
It will give each student a unique insight into Simon Rogan’s farm-to-fork ethos and overall vision. Students will also gain a detailed understanding of sustainable restaurant practices, which will be further enhanced by working alongside the team at Our Farm.
Within each restaurant rotation, the apprentices work across every section of the kitchens to learn as much as possible. The fifth day is spent at Kendal College, learning the essential skills needed to develop a successful career in the kitchen and attain an accredited Apprenticeship. Upon completion of the apprenticeship, the apprentices will be presented with the Level 2 Production Chef apprenticeship qualification.
