Chef Louis Tikaram is bringing his culinary prowess to YUKI Bali at two exclusive guest chef events: YUKI Canggu on Thursday, 4 July, and YUKI Uluwatu on Saturday, 6 July. Known for his innovative fusion of Chinese flavours, Louis will be curating a special menu alongside YUKI chef Yudha Permana using the best produce on the island.
Louis’ career was shaped by his Fijian-Chinese grandmother and honed in the kitchens of Tetsuya’s and Longrain in Sydney. In Los Angeles, his stint at E.P. & L.P. garnered acclaim, blending cultural influences with Southern Californian flavours, captivating celebrities and media alike.
Now back in Australia, he has redefined Brisbane’s dining landscape with Cantonese restaurant Stanley. His ethos matches YUKI’s as it revolves around quality food, community, and appreciation for fishermen and farmers.
The bespoke menu will feature new YUKI dishes for the occasion and Louis’ Balinese-inspired specialities like Slipper Lobster (similar to Moreton Bay Bug) spring roll with spicy mayo; Spicy Sichuan pork and prawn wontons; Steamed scallops XO and vermicelli; Cumin spiced lamb ribs with chilli and coriander; Honey glazed roast char siu pork; Steamed coral trout with white soy, ginger and shallots; Crispy chicken with chilli crunch and relish; and finish with Golden fried choux pastry with star anise, white chocolate, and passionfruit.
